We process in very small batches of animals, and every animal is different. Therefore providing a consistent fat to lean ratio is difficult. Because our cattle are grass-fed throughout their lives and are never confined and fed corn, the meat is typically lean. I would estimate that the lean to fat ratio averages 90:10
Our Ground Beef (1 pound) is vacuum sealed and sold frozen.
